Aebleskivers!

Chelsea recently watched a travel show with our favorite puzzle artist, Eric Dowdle, featuring the Danish village of Solvang, California.  These little Danish Pancake Balls caught her eye, and she had to try them!  She bought the pan at Bed, Bath & Beyond, and we set to making a scrumptious breakfast.

Basically, an aebleskiver is a little round pancake, filled with some kind of fruit compote in the middle.  Brush each section with butter and pour in 1 Tablespoon of batter.  Add a little filling, then top with another Tablespoon of batter.

Cook on medium heat for a couple of minutes, until you see the batter start to bubble, then flip over (Chels used a chopstick) and cook another couple of minutes.

Getting the hang of it.

We just used the recipe that came with the pan, with a grated apple-pie-type filling.  I tried a few with huckleberry jam, and oh, ummm!

Dust with cinnamon sugar or powdered sugar and serve.  I ate mine with butter and syrup, like regular old pancakes.  Here's a recipe from Food.com if you want to try:  Aebleskivers.

Now I'm wondering about filling the middles with ham & cheese or bacon, or maybe Nutella...

Deliciousness.

Hallowe'en Breakfast

What's for breakfast on Hallowe'en morning?

Pumpkin Pancakes recipe from AllRecipes.com

There is always something cooking at the Chateau de Stott!  The Dad's "Sunday Morning Deluxe Whole Wheat Waffles" are legendary, but we wanted to try something different.

The taste of Fall.  Definitely a keeper!

Santa Waffles

Oh, we love Dad's luscious Sunday Morning Special Deluxe Whole Wheat Waffles.  From the time they were little, the Dad would line all the kids up at the kitchen countertop to "help" make waffles or pancakes on the weekends and for special occasions.  Fun memories.

And there's nothing like a few sliced strawberries and a little whipped cream to take 'em up a notch.

oops... running out of whipped cream!
Delicious!

Ryler's Amazing, Awesome Valentine's Day Surprise

Ryler made Waffles for Lauren on Valentine's Day.  ♥♥♥

And re-folded some of the origami paper cranes leftover from the wedding reception into these...

Dad's Sunday Morning Special Deluxe
Whole Wheat Waffles
Sift together:
1-1/4 c. white flour
1-1/4 c. whole wheat flour
4 t. baking powder
1 t. salt
2 T. sugar

In a separate bowl, combine:
2-1/2 c. milk
(or use 1/2 c. powdered milk with 2-1/2 c. water)
1/2 c. oil
4 egg yolks
Add to dry ingredients.

Beat until stiff:
4 egg whites
Gently fold into batter.

Cook in a waffle iron. Serve topped with butter or peanut butter and homemade maple syrup.

Homemade Maple Syrup
Stir together and bring to a boil:
1 c. water
1 c. sugar
Remove from heat, then add:
1/4 t. imitation maple flavoring

Our family likes a thinner syrup, but you can add up to another cup of sugar if you like it thick and sticky.

LOVE.

Breakfast Casserole

Found this Breakfast Casserole recipe online.
Christmas morning-perfect!

1 (30 oz) package frozen shredded hash brown potatoes, thawed
1 onion, diced

1 lb ground sausage, browned and drained
2 cups shredded strong cheese (sharp cheddar, swiss, etc)
1 green pepper, slice a couple of rings for garnish, dice the rest
1 red pepper, slice 6-7 rings, dice the rest

1 c. sliced mushrooms
12 eggs
2 cups milk
1/2 t. salt
1/4 t. ground black pepper

Drain potatoes, and fry in frypan with onion to get most of the moisture out.  Assemble remaining ingredients, pouring the egg/milk mixture over the top.  Garnish the top with pepper slices.
Bake in a 325-degree oven for 1 hour, or until inserted knife comes out clean, and eggs are set.

Top with green onions, salsa, tomatoes, mushrooms, avocado, etc.
