Peanut Butter Cookies

No chocolate chips to be found in the house?

 The perfect Sunday afternoon treat.  Made by the DAD.  Eaten by everyone.  Sooo good.

Peanut Butter Cookies
Thoroughly cream together:

• 1 c. shortening
• 1 c. sugar
• 1 c. brown sugar
• 2 eggs
• 1 t. vanilla

Stir in:

• 1 c. peanut butter

Sift together and add:

• 2 c. sifted flour
• 2 t. soda
• 1/2 t. salt

Stir into the creamed mixture.

Scoop into balls with a 1” ice cream scoop and place on ungreased cookie sheet.
Press each cookie with back of floured fork to make crisscrosses.

Bake at 350o for 9 minutes.  Yield:  About 60 soft yet crispy cookies.
